Whole30 salmon patties

Salmon patties are so easy to make and packed full of nutrients. As I am currently undertaking my third Whole30 in as many years, I needed to create a recipe that was compliant with the Whole30 rules and is low FODMAP. So here it is!

Details

  • Makes 6 patties
  • Serves 2
  • Total preparation and cooking time – 20 mins
  • Whole30
  • Paleo
  • Gluten free
  • Grain free
  • Dairy free
  • Low FODMAP (in line with serving sizes in the Monash University Low FODMAP App at the time of writing)

Ingredients

  • 100g tin of salmon (check the ingredients to ensure that they are Whole30 compliant)
  • 1/2 cup grated sweet potato
  • 1/2 cup grated potato (squeeze out the liquid before measuring)
  • 2 eggs
  • 1 tablespoon of parsley (roughly chopped)
  • 2 tablespoons almond meal
  • 1/4 teaspoon cumin
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon apple cider vinegar
  • 1/4 teaspoon bicarb soda
  • 1 tablespoon of coconut oil (for the pan)
  • Pinch of salt and pepper

Method

  1. Mix all of the ingredients in a bowl with a spoon
  2. Heat a frypan on medium heat with a little of the coconut oil
  3. Spoon in palm sized amounts and spread them out a little with the back of the spoon
  4. Once cooked on one side (it’ll be crispy around the edges), flip and cook on the other side

Serve

On their own as a snack or with a salad and a little homemade mayo. Yum!
