roast potatoes with rosemary and beef dripping

Ingredients

  • potatoes
  • 2 tbs fresh rosemary, chopped
  • 2 tbs grass fed or organic beef dripping

method

  1. Pre-heat a moderate oven
  2. Chop the fresh rosemary and place it into a large bowl
  3. Melt the beef dripping in a small oven proof dish in the pre-heating oven
  4. Chop the potatoes into chunks and place into the bowl
  5. Once the beef dripping has melted pour it over the potatoes and rosemary and using your hands or a spoon toss the mix well to ensure that the potatoes are well coated
  6. Spread the potatoes on a baking tray and bake in the oven for 45 min to 1 hour until crispy on the outside and soft and fluffy on the inside
